The Best Peanut Butter Cookie You’ll Ever Eat

One of my favorite things to do is bake. So to start off the new year I’ve decided to share my favorite peanut butter cookie recipe with you guys.

I know I know, why am I posting a cookie recipe on my blog on January second? People are trying to get fit here! Yes, but in my opinion, everything in moderation is just fine. Even if you are trying to lose some weight this January or are vowing to eat healthier, these won’t ruin your plan. Hey, peanut butter is full of protein am I right?! 😉


I made these on New Year’s Eve for the family and thought they were too good to not share..

One of the EASIEST recipes you will come across online is this peanut butter cookie recipe. They are so simple, yet so delicious. They are a hit any time of the year. Perfect for the holidays or just as a snack for the kids. But be prepared, if you bring them to a get together, they will disappear quickly!

Peanut Butter Cookies

Serves 24


1/2 cup softened butter
1 cup peanut butter
1/4 cup sugar
3/4 brown sugar
1 egg
1 tablespoon vanilla
1 teaspoon salt
1 teaspoon baking soda
1 1/2 cup flour
sugar to sprinkle on top


So here we go, first you’ll want to preheat your oven to 350 degrees. Then get 2 baking sheets and cover them with either parchment paper or wax paper. Spray pans with non-stick cooking spray to make sure they don’t stick. Once that’s set we can start on the cookies. Add the sugar, brown sugar, butter, peanut butter, egg, and vanilla to your mixer.

Mix till ingredients are fully combined together. In a separate bowl combine flour, baking soda, and salt. Then slowly add dry ingredients to standing mixer. Once that’s all mixed together, we can start shaping some cookie balls. Grab a little handful and shape them into balls.

Once you have 12 on a sheet, grab a fork and gently press down to create “tic tac toe” lines on top. Sprinkle some sugar on top (the kids have fun helping with this part!) of each one and pop them into the oven. Bake 8-10 minutes. Let cool and enjoy! 

*Hint* Sprinkle more sugar on top after they come out of the oven to make them look pretty 🙂

  • 1 cup peanut butter
  • 1/2 cup butter
  • 1 egg
  • 1 tsp baking soda
  • 3/4 cup brown sugar
  • 1 1/2 cup flour
  • 1 tsp salt
  • 1/4 cup sugar
  • 1 tbsp vanilla


  1. Preheat oven to 350 and prep 2 baking sheets with wax paper.
  2. Combine sugar, brown sugar, peanut butter, butter, egg, and vanilla in standing mixer. Mix till fully combined.
  3. Combine dry ingredients in small bowl, then slowly add to standing mixer until fully combined.
  4. Shape dough into balls.
  5. Gently press dough down with fork to flatten and create tic tac toe lines on top.
  6. sprinkle with sugar and bake for 8-10 minutes.
  7. Let cool and enjoy!
