One of my favorite things to do in the summer is bake cookies. Now, some of you might be thinking, it’s too hot for the oven to be on! Sure, it’s warm. But cookies are my comfort food. They just make me happy. Plain and simple. And one of my favorite recipes to make is the ooey-gooey deliciousness that is my oatmeal chocolate chip cookie recipe. It is a must try!Ooey- Gooey Oatmeal Chocolate Chip Cookies

Nothing goes better with cookies than milk. And I think everyone can agree on that. It’s just not a real cookie if you don’t have milk. Even though my family doesn’t suffer from dairy restrictions, I know a huge portion of people do. And I would hate to think that you guys cannot enjoy cookies with milk! And although none of my kid are lactose intolerant, I love giving them a2 Milk®. Let me tell you why..

a2 Milk® is REAL milk. It’s not fake. It’s not some weird milk substitute. It’s actual milk. And I don’t have to worry about my kids getting an upset stomach when they drink it. Those who have tummy troubles with regular milk might not experience problems at all with a2 Milk®. Something that I never even realized was that the A1 protein is the culprit behind many people’s discomfort after consuming dairy, and is currently in all conventional & organic milks on the U.S. market. a2 Milk® only comes from specially selected a2 cows, whose milk is naturally free of the A1 protein. How cool is that?!

a2 Milk® is the most convenient, affordable replacement to overly processed milk. An independent study showed 1 in 4 Americans have discomfort after drinking milk; yet only 5-7% of the population has been clinically diagnosed with a lactose intolerance medical condition. I was shocked after seeing those numbers. I can’t believe so many people can’t enjoy milk as much as I can and do every single day. I have tried Almond milk because I’ve heard it’s much healthier and contains more vitamins, but get this, a2 Milk® contains approximately 6x the amount of calcium as soy beverages, approximately 8x the protein of almond beverages and approximately 6x the potassium levels of rice beverages. Who knew right?

And just so you know, It tastes exactly like regular milk! At least to me and my kids. They have tried Almond milk and yeah, they didn’t care for it. Lol. But a2 Milk®? They COULD NOT tell the difference! I swear, it is delicious!

Now, the part you’ve been waiting for… The cookie recipe!

Oatmeal Chocolate Chip Cookies

Ingredients:

1 egg
1/2 cup butter
1/2 cup brown sugar, packed
1/4 granulated sugar
1 tablespoon vanilla extract
1 cup oats (any kind is fine. I used the “1-minute” oats and they worked great!)
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt, or to taste
1 overflowing cup of semi-sweet chocolate chips 😉

Directions:

  1. In a large mixing bowl, add egg, butter, brown sugar, sugar, and vanilla extract. Mix with mixer for a good 2-3 minutes. Until creamy and fully blended.
  2. Scrape down sides and add oats, flour, baking soda, and salt. Beat on low for about 30 seconds.
  3. Scrape sides and add chocolate chips. Mix until fully blended.
  4. Get out your cookie sheet, add cooking spray or grease to baking sheet and place good size scoops of dough onto tray. (I make about 12 large cookies with this recipe.)
  5. Place in refrigerator and let cool for 1-2 hours. If you don’t let cool, cookies will get flat and spread out on cookie sheet. So make sure and refrigerate!
  6. Preheat oven to 350F, place cookie sheet in and bake for 12- 15 minutes.
  7. Voila. Beautiful, yummy, delicious cookies!! ENJOY!
