The Most Bomb Diggity Chicken Parmesan Recipe

There is nothing better than the ultimate comfort food when you are down or just want the pleasure of digging into your favorite yummy, delicious food. For me, that dish is Chicken Parmesan. It is my absolute favorite dish. My husband, knowing this, has perfected the dish, just for me. I know, major sweetheart. And I just melt whenever I taste this food! You have got to try this out. Like, tonight. It may look like a lot of steps, but it’s actually pretty easy!

I am so excited to be sharing this recipe with my wonderful, lovely readers! Here it is, my husband’s Famous Chicken Parmesan. Just so you guys know, my husband has this knack for basically creating the most delicious meals you’ve ever had the pleasure of eating with no recipe, off the top of his head. I am beyond jealous of his insanely mad cooking skills. He is a magician. I told him he should try out for Master Chef! Yes, he’s that good..

So without further ado, here is the scrumptious recipe. Let’s start with the ingredients.. Here’s what you’ll need-

Ingredients for  the BEST Chicken Parmesan- What You'll Need- Just One Mommy's Opinion

Ingredients

2 lbs. chicken breasts
Half of an onion (cut into cubes)
2 whole carrots (grated)
Mexican Blend Shredded Cheese
Salt and Pepper (to your liking)
One Box Thin Spaghetti noodles
Panko Bread Crumbs
Parmesan Cheese
Garlic salt
Paprika
Garlic Cloves
2 eggs
1 Cup Flour
Olive oil
Parsley
1 Jar Spaghetti Sauce

Prep Work

Start by grating your carrots, chopping your onions, boiling your noodles, and filling 3 bowls with eggs (and a little milk), flour (with some paprika, garlic salt, and pepper), and panko crumbs. Now, let the cooking begin!

Let’s Start Cooking!

Start by dipping the chicken breast in the flour mixture on both sides, then coat with the egg, then the panko bread crumbs. Follow by placing directly in pan on low – med heat until you get color on both sides. (You are not cooking the chicken thoroughly here. That comes later in the oven.)

Meanwhile, cook the noodles according to package instructions. After cooking the noodles, add some olive oil and parsley for flavor.

Heat oven to 400.

Coat browned chicken with parmesan on both sides and press in, then add Mexican blend shredded cheese, a sprinkle more parmesan, garlic salt, pepper, then bake for 20-25 minutes or until cooked through.

Meanwhile

While the chicken is baking, it’s time to start the sauce. The yummy, creamy, thick spaghetti sauce that my husband has perfected!

Get 2 tbsp of olive oil heated in your sauce pan. Add garlic cloves and onions. Once onions have caramelized, add 1 jar of spaghetti sauce, and grated carrots.

Noodles, Chicken, Sauce, and top with a little parmesan. Then DIG IN!

    1. Yes! It’s a great way of sneaking in the veggies, and it also makes the sauce thick and creamy! When my husband suggested adding carrots, I was very skeptical. But now, I wouldn’t make it any other way!
