Need a quick and easy dinner for this week? Try out this delicious recipe that even your kids will love! My husband is the cook in this family, he has a talent, I do not. And he loves making new dishes from recipes he finds on the internet. He takes the ideas and runs with them, adding his own little flair on things. This week he tried what’s called a “Hobo Meal”. I’m assuming that term comes from people who cook outdoors while camping, or something like that. The meal is quick and DELICIOUS. ~ Ingredients ~
4 medium red potatoes sliced
1 Bag baby carrots cut into rounds
1 Bag green beans cut up
1 large onion sliced
2 tbsp olive oil
1 tbsp garlic salt
Salt and Pepper
2 lbs ground beef
3 Italian Sausage Links
1 egg beaten
1 cup panko bread crumbs
2 tbsp Worcestershire sauce
1 cup shredded cheddar cheese
~ Directions ~
Get all your veggies chopped (keep potatoes in water while chopping rest of veggies so they do not brown).
Combine meats, beaten egg, bread crumbs, cheddar cheese, garlic salt and Worcestershire sauce together in a large bowl. Mix well and form into patties.
Place cut veggies in a bowl and drizzle with olive oil and season with salt and pepper. Toss to coat.
Take a large piece of tin foil and place 2 or 3 patties in the center. Cover with a portion of vegetables and seal up packet. (Don’t be afraid to get your hands dirty!)
Place packets on a cookie sheet and bake at 400F for about 55 minutes, checking for doneness. Veggies should be tender and meat patty internal temperature should be at least 160F. Then… ENJOY!
